Her ne kadar adı Hollanda'yı çağrıştırsa da, bu sos yine bir Fransız mutfağı ana sosudur. İsmi nedeniyle bir bağlantısı olduğu düşünülse de henüz bir kaynak bulunamamıştır.

Malzemeler

  • 2 Adet Yumurta Sarısı
  • 100 gr Tereyağı
  • 1/2 Kahve Fincanı Su
  • 1/4 Limon Suyu
  • Tuz

Yapılışı

2 Yumurta sarısı, bir tutam tuz ve suyu porselen bir kapta çırpın. Daha sonra bu kabı sıcak su dolu bir başka kaba oturtun (buna benmari yöntemi denir). Çırpma teli ile sürekli karıştırın. Küçük küplere bölünmüş tereyağını azar azar ilave ederken çırpmaya devam edin. Yağ eridikten sonra kaseyi benmariden alın ve limon suyunu damla damla ilave ederken sürekli çırpmaya devam edin. Tüm malzemeleriniz ilave edildiğinde sosumuz kıvamını tamamlayacak ve kullanıma hazır olacaktır.

  • Çırpma süresinde sosunuz kesilebilir. Bu durumda 1/2 Yemek Kaşığı soğuk su ekleyerek yeniden çırpabilirsiniz.
